Shrimp Scampi

This recipe makes enough for 4 or 5 people. The following pictures are from making an individual serving. If cutting the recipe, I recommend using a little more garlic and olive oil than the cut amount... but I'm also a garlic fanatic! :-) I usually throw the scampi on top of whole wheat linguine, but any pasta could be used... or it could just be eaten with a side! (Great with broccoli!)

Another side note- this can also be made with the equivalent of chicken as well.

Chloe's Apple Muffins

I'm back! This last semester didn't leave a whole lot of time for trying different recipes, and when I did have time to cook I was mostly just doing the "No recipe" cooking where I throw things together at my liking, so those are kind of hard to share :-P . But, I am hoping to get more up here soon.

For now... I wanted to share a link to one of my favorite blogs, Butterfly Cupcakes and Daffodils, because she recently posted what looks like a DELICIOUS recipe for Apple Muffins. I will definitely be trying these soon! She's also a great blog to follow for multiple reasons, but she does a lot of yummy recipe posts throughout her blog.
